UGH!!! Handling a special event is tough. This is especially true if you are expected to cook things that have high glycemic ratings. I did just that this week-end. As some of you know I was competing in the KCBS sanctioned competition held during the Blue Ridge BBQ Festival in Tryon, NC. Many rubs and sauces are loaded with sugar. Since this is for a competition you want to use the best in spices and herbs, so using a sugar substitute is not the best idea. So what do you do.
Moderation is the key here and really required. It also helps to have people around you that you trust to give you and honest assessment of your rubs and sauces. When offered samples of other peoples food politely decline letting the offerer know you are on a restricted diet. Anybody who gets offended really need to work on that issue.
