Two Potato Moussaka
About 20 years or so ago I found this recipe in one of my first wife's magazines. For those that don't know Moussaka is a Greek disk traditionally made with Lamb and Eggplant. I have had the real Moussaka a few times, but this one always seemed better to me. For life of me I could not remember which magazine it was in, but a search of the internet for similar recipes. Using them I reconstructed the one I had long ago. So here it is.
Ingredients
1 lb red potatoes (large )
1 lb yam or sweet potato
1 lb ground beef (ground lamb is more traditional, ground bison works too)
1 1/2 teaspoons ground cinnamon
2 cups milk
1/4 cup flour
2 tablespoons butter
1/2 teaspoon ground nutmeg
salt and pepper
1 egg yolk
3 tablespoons grated parmesan cheese
Procedure
Pre-heat Egg to 400 degrees indirect. Just lump no smoking chips or chunks. Make sure the smoke is clean.

Cook red skinned potatoes in microwave for 5-7 minutes.
Cook yams in microwave for 7-9 minutes.
Thinly slice potatoes.-so --
The idea here is to soften the potatoes so they are done when the sauce sets up. If you go
this route you seriously need to be careful. You can over cook the potatoes..Slice (1/4" or so) the raw red skins potatoes and peeled sweet potatoes. Lay them out on a baking dish or pizza pan and bake them for 15-20 minutes in your heated up egg. Remember you want them softened not fully cooked. You don't need to single layer them, but if you can do it.

While they are baking or being Microwaved.In medium skillet, brown beef for 5 minutes. Add cinnamon Simmer 3 minutes.
Combine milk, flour, butter, and nutmeg in small saucepan over medium heat, stirring constantly. Bring to boil and simmer for 1 minute.
Season with salt and pepper.
Remove from heat and whisk in egg yolk.Almost done.
Place half of potatoes and yams on bottom of 2 quart casserole.
Layer meat mixture, then remaining potatoes and yams.
Pour sauce on top.
Sprinkle with parmesan.
Bake for 30 minutes.This should serve 6. Prep time to seving time: 1.5 hours.
It is well worth the time and effort.
