Porkenpenos
Ingredients
1 or 2 six inch hunks of Pork Loin butterflied.
1 or 2 boneless chicken breast pounded flat.
1/4 cup of grated cheddar per pieces of pork
2 or 3 Jalapenos per pieces of pork (sliced or chopped seeds removed)
Your favorite Pork Rub. (I use Dizzy Pigs Raging River)
2 or 3 slices of bacon per pork piecesProcedure
Preheat your egg 350 indirect. add pecan or hickory chunks
Lay out the butterflied pork pork
place the flatten chicken on the pork
spread the cheddar cheese on the chicken
spread the peppers on top of the cheese
Fold the pork up around itself and wrap with bacon.
Hold in place with butchers twine or toothpicks. Sprinkle your favorite pork rub all over.
Cook till 165 internal. You want the chicken done. The Pork will still be moist.
About 45 minutes or so.
